Happy Halloween weekend! 

Pumpkin flavor recipes I found. I hope you enjoy and have a great safe SPOOKY weekend!

Pumpkin Pancakes Recipe 🎃

INGREDIENTS 

      • 2 cups quick rolled oats 

      • 2 cups milk of choice

      • 2 eggs

      • 3/4 cup pumpkin puree

      • 4 dates

      • 1 1/2 tsp baking soda

      • 1 tsp pumpkin spice (optional)

    INSTRUCTIONS

        • Place 1/2 of the oat into the blender first and then add in your baking soda. Top with the rest of your oats.

        • Then add in your two eggs, milk, pumpkin puree, dates, and pumpkin spice. 

        • Blend on high until smooth.

        • Let sit while you heat your pan to medium-low heat—grease well with avocado oil or ghee.

        • Scoop out just under 1/4 of a cup of batter per small pancake.

        • Cook for approx. 2 minutes per side or until brown. The best tip is to flip the pancakes when they are bubbling

      Pumpkin Banana Muffins 🎃🍌

          • Mash bananas well in a large bowl.

          • Mix in all wet ingredients into the mashed banana (coconut oil, maple syrup, eggs, pumpkin, milk, vanilla)

          • Add in the pumpkin spice, baking soda, and salt – stir.

          • Mix the flour in (don’t overmix or muffins can be tough)

          • Fold in chocolate chips.

          • Pour into a well-greased muffin tin filling about 2/3 full.  I used silicone liners and didn’t grease and they came out easily.

          • Bake at 350 degrees Farenhight for 22-24 minutes or until a toothpick comes out clean.

        Applesauce pancakes 🍏🥞

        INGREDIENTS

            • ¼ cup rolled oats

            • 2 eggs

            • 1/4 cup apple sauce

            • 1 tsp and ¼ tsp baking powder

            • ½ tsp baking soda

            • 1/8 tsp salt

            • 2 tbsp maple syrup / honey / sugar

            • ½ tsp cinnamon powder

            • ½ tsp vanilla essence

            • 1 cup milk

            • ¼ cup packed grated apples with or without skin

            • Olive oil / avocado oil or butter for cooking the pancakes.

          INSTRUCTIONS

              1. Add all the dry ingredients like wheat flour, oats, all purpose flour, baking powder, baking soda, salt, cinnamon powder to a bowl and combine everything together.

              1. Add the eggs, milk, applesauce, maple syrup, vanilla essence and grated apples to another bowl and mix everything.

              1. Now add the dry ingredients to the wet and mix until combined.

              1. Heat a cast iron pan with oil/ butter and add ¼ cup of the batter to the hot pan.

              1. When you see the bubbles starting to appear, flip the pancake and cook on the other side for about 2 minutes.

              1. Serve with maple syrup, chopped and sauteed apples, other fruits and nut butter of your choice.

            Apple Muffins 🍏

            Found a recipe free from refined sugar, eggs and dairy.

            INGREDIENTS

                • 1 cup unsweetened apple sauce

                • 83 ml oil One third of a cup, 83ml

                • 1 cup rolled oats

                • 1 cup plain flour

                • 3 teaspoon baking powder

                • 2 teaspoon cinnamon

              INSTRUCTIONS

                  • Heat the oven to 180 degrees celsius and line or grease a muffin tin (I have used a silicone reusable muffin tin when testing this recipe)

                  • In a medium sized bowl mix the applesauce and oil together (I use a whisk for this)

                  • Add the remaining ingredients, I sprinkle the baking powder around as I’m too lazy to sift!

                  • Mix with a wooden spoon until just combined

                  • Portion into prepared muffin tin

                  • Bake at 180 degrees for 30 – 35 minutes

                Pumpkin Muffins 🎃

                INGREDIENTS 

                    • 2 cups old fashioned rolled oats

                    • 1 ½ tsp baking powder

                    • 2 eggs

                    • ¼ cup unsweetened apple sauce

                    • ¼ cup maple syrup

                    • ¼ cup oil (mild tasting like coconut oil)

                    • 1 tsp vanilla extract

                  INSTRUCTIONS

                      • Preheat the oven to 350 degrees F (180 degrees C).

                      • Blend the oats into a flour and add it to a bowl.

                      • Add the baking powder, and pumpkin spice to the bowl with the ground oats and mix until combined.

                      • Blend the pumpkin puree, applesauce, eggs, oil, maple syrup and vanilla until smooth. Pour this mixture into the bowl with the dry ingredients.

                      • Mix until combined.

                      • Pour the mixture into a mini muffin pan. Bake for 15 minutes, or until a toothpick comes out clean.

                    Pumpkin Smoothie Recipe 🎃

                    INGREDIENTS

                        • 1/2 cup pumpkin puree (canned) or steamed pumpkin 

                        • 1 frozen banana

                        • 1/4 Tsp. pumpkin spice

                        • 1 large spoonful of plain or vanilla yogurt

                        • 1/2 cup milk of choice (or water).  I used whole milk for this recipe. 

                      Instructions:

                      Add all ingredients to a blender and blend until smooth. Enjoy!

                      Easy creamy Pumpkin pasta🎃

                      INGREDIENTS

                          • Chicken stock

                          • 3 tbsp cream cheese

                          • 2 cups pasta noodles

                        INSTRUCTIONS

                            • Boil pasta noodles according to package instructions and set aside. Reserve some of the pasta water.

                            • Preheat a pan on medium, low heat.

                            • Add the chicken stock to the pan and add in the pumpkin puree. Stir until it is smooth and fully combined with the chicken stock.

                            • Add in the cream cheese and pumpkin spice and stir until they are both incorporated.

                            • Toss the pasta noodles in the sauce until fully coated. If needed, add in a little chicken stock or reserved pasta water to thin out the sauce.
